Summary

Duties and Responsibilities:
· Complies with quality standards, department rules, policies and procedures.
· Identifies and select cuts of meat, poultry, shellfish, fish, game or vegetables used in preparation of menu items.
· Prepares garnishes for broiled and roasted dishes.
· Prepares other items needed at broiler station such as vegetables, starches, appetizers, or desserts that may be glazed in broiler.
· Sets up and maintain soups throughout the day, as well as appropriate garnishes.
· Broil and plate meats, poultry, shellfish, fish, game or vegetables, along with appropriate garnish.
· Roasts, carves, and plates meats, poultry, shellfish, fish, game or vegetables.
· Maintains a sanitary work environment including areas where food is prepared and stored.
· Selects and uses knives, hand tools, utensils and equipment to cut, slice, broil, roast, carve, skewer, garnish foods. Maintains holding temperature for foods, grills, otherwise produces food in the broiler station.
· Tastes food prepared to ensure flavor, texture and consistency and see that items meet established quality standards.
· Performs any other task that is assigned for the successful operations of the company.

Education and/or Experience:
High School graduate(GED), degree from a post-secondary culinary arts training program is desirable. Minimum of one year in a food preparation position in a high-volume restaurant setting.

Language Skills:
Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to speak, read, write and understand English.

Working Conditions:
Must be able to speak clearly and listen attentively to managers, employees and dining room staff; stand and walk in kitchen for periods over 8 hours; lift pots, pans, etc. up to 40 pounds in weight; possess finger dexterity to use small tools adeptly; read and follow written instructions; possess good smell and taste abilities and be able to do repetitive motions.

Summary

The Sous Chef is second in command in the kitchen and in charge of production, supervising and training staff. The Sous Chef ensures that all food production workers are performing their duties by quality standards established by the Executive Chef. The Sous Chef is a managerial position and assumes the duties of the Executive Chef in his/her absence. Assist with planning, organizing, controlling, and supervision of food production functions.

Supervisory Responsibilities

  • Is responsible for the overall direction, coordination, and supervision of the back of the house.

Essential Duties and Responsibilities

  • Supervise kitchen staff, dishwashers and cleaning crew at all stations.
  • Verifies that all portion sizes, quality standards, department rules, policies and procedures are maintained by kitchen employees.
  • Verifies that all sanitation and nutrition practices are maintained by all kitchen employees.
  • Supervises and assists in the production of all food items.
  • Writes menus using new and creative concepts that are suitable for restaurant clientele.
  • Assist in food purchasing, pricing and quality control in receiving food items.
  • Assist in in proper food storage, inventorying and stock rotation.
  • Taste food prepared to ensure flavor, texture and consistency and that those items meet established quality standards.
  • Prepare, supervise and execute banquet production.
  • Trains cooks and kitchen helpers handles disciplinary matters giving verbal warnings and formal write-ups.
  • Involved in interviewing and hiring new employees.

Education and/or Experience

  • High School graduate (GED). Degree from a post-secondary culinary arts training program is desirable. Minimum of two years’ experience as a Sous Chef in a high volume upscale restaurant required.

Summary:
Responsible for dealing with the public graciously and efficiently to make certain that guests enjoy their visit to the restaurant. Presents a pleasant and professional appearance at all times, and makes guests feel welcome. Coordinates activities of dining room personnel to provide fast and courteous service to patrons by performing the following duties.

Duties and Responsibilities include:
· Greets guests with a friendly smile, escorts them to tables, and provides guests with a menu.
· If no table available, inform guests of approximate waiting time.
· Maintains a thorough knowledge of dining room stations, and specific server assigned to each station. Distributes guests equally to servers, ensuring a high quality of service.
· Remains alert and responsive to the needs of the seated guest(s); if necessary, summons their server, listens to their concerns and, if necessary, informs management of any complaints.
· Reports to manager any malfunction of equipment and/or necessary repairs or replacement of furnishings, equipment, etc.

Education and/or Experience
High School diploma or general education degree (GED) and one year of related customer service experience.

Summary:
Washes and stores all dishes, trays, eating utensils, cups, pots, pans and cooking utensils. Maintains the dish machine and pot washing area in a sanitary and efficient manner. Maintains, cleans walls and floors in kitchen. Maintains all refrigeration, storage spaces, walls, floors, utensils and equipment.

Essential Duties and Responsibilities:
• Sets up and breaks down dish machine, including arms, screens and baskets. Cleans and polishes machine thoroughly, including removing debris and rinsing out the interior.
• Checks out machine to make sure it is operating correctly. Reports any defects immediately. Checks water temperature during operation to ensure proper temperature.
• Washes and stores in proper places all dishes, utensils, cups, small equipment, pots and pans.
• Removes all trash from kitchen and places in dumpster. Cleans and sanitizes garbage cans, as well as changing liners in cans. Makes sure dumpster lid is clean and kept closed.
• Keeps soap storage area neat and orderly. Keeps dish room area neat, with all proper soaps and chemicals. Cleans all stoves, ovens, grills, steam tables and hood vents.
• Washes all walls, refrigerators and shelving in kitchen. Sweeps and mops kitchen floor.
• Assist in vegetable preparation and any other tasks as needed in the operation of the restaurant.

Education and/or Experience:
Entry level position, High School or GED be able to communicate in English.

Physical Demands: Must be able to bend, stoop, lift and carry dish racks weighing up to 40 pounds on a regular and continuing basis. Must be able to stand for 8 hours and move from area to area in the kitchen. Required occasionally to assist in pre- preparing of food items. Subject to wet floors, temperature extremes and loud noise.

Job Summary

Perform a variety of maintenance/minor repair activities on the interior/exterior areas including, but not limited to painting, interior and exterior light bulb replacement clearing drain stoppages. Perform preventive maintenance, cleaning and repairs as assigned by management.  Perform Houseman duties as required.

PRINCIPAL RESPONSIBILITIES:

The successful candidate’s responsibilities will include, but not be limited to:

  • Perform a variety of maintenance/minor repair activities on the interior/exterior areas including, but not limited to, painting, clearing drain stoppages, interior and exterior light bulb replacement.
  • Perform preventive maintenance cleaning and repairs as assigned by management.
  • Perform the job in accordance with all applicable standards, (i.e. OSHA standards) to promote a safe working environment.
  • May perform additional maintenance duties as assigned.

 

MINIMUM QUALIFICATIONS:

  • High School Diploma or GED preferred.
  • Minimum 2 years building maintenance, houseman or construction background.
  • Ability to read and interpret documents and comprehend instructions. Ability to effectively present information to management and employees.
  • Ability to apply common sense understanding to carry out instructions furnished in written or oral form.
  • Self-starter with ability to work independently.
  • Capability to diagnose problems on equipment.
  • Ability to read and comprehend simple instructions, short correspondence, and memos.
  • Must be able to speak, read, and understand English.

Ability to lift and carry up to 60 pounds and must be able to stand, bend, twist, reach, see, hear, use hand tools and climb ladders.
